MONDAY MEAT PIE 
1/2 c. chopped onion
1 tbsp. shortening
2-3 c. cooked beef, cut in cubes
2 c. cubed cooked potatoes
2 med. carrots, cooked and sliced - about 1 c.
4 oz. sharp American cheese, shredded (1 c.)
1/2 c. salad dressing
1 (10 3/4 oz.) can (1 1/2 c.) beef gravy
1 (14 oz.) pkg. cornbread mix

In saucepan, cook onion in hot shortening until tender, but not brown. Add beef, potatoes, carrots, 1/2 the cheese, mayonnaise, and beef gravy. Heat to bubbling. Pour into 9 x 9 x 2 inch baking dish. Prepare cornbread mix according to package directions, adding remaining cheese. Spoon over hot meat mixture. Bake at 400 degrees for 25 minutes or until bread is browned. Excellent way to use left over roast.
