STRAWBERRY PRESERVES 
1 qt. large strawberries
4 c. sugar
1 tbsp. lemon juice

Wash and drain strawberries. Place in a colander (metal), dip into boiling water for 1 minute. Then dip into cold water for 1 minute. Drain well. Put the berries in a large pot, add 2 cups sugar and cook over low heat until all the sugar melts. Boil for 4 minutes. Add 2 cups sugar and lemon juice. Then boil 4 more minutes longer. Pour into jars and seal.
