CHICKEN & PORK APRITADA 
2 tbsp. oil
1 lg. onion, sliced
1/2 c. tomato sauce
1 lb. chicken, cut into serving pieces
1 lb. pork, cut into serving pieces
3 red bell peppers, cut in strips
4 potatoes, quartered & fried
1 1/2 tsp. minced garlic
3 tomatoes, sliced
3 tsp. salt
6 tbsp. vinegar
1 c. water or stock
2 tbsp. bread crumbs

Saute garlic, onions, tomatoes and tomato sauce in oil. Season with salt. Add meats, vinegar and let simmer for 5 minutes. Then add enough water or stock to make meat tender and make up for sauce. When almost done, add sliced bell pepper and thicken with bread crumbs. Cook for 5 minutes. Remove from heat and garnish with fried potatoes.
