PEACH COOKIE SUNDAE 
1/4 c. granulated sugar
2 tbsp. corn starch
1/2 tsp. cinnamon
1/2 c. corn syrup
5 c. peaches, peeled and sliced (about 2 1/2 lbs.) - frozen or canned equivalents can be used
1 (20 oz.) pkg. refrigerator sugar cookie dough

In a bowl stir together sugar, cornstarch, cinnamon and corn syrup. Add peaches; mix well. Pour mixture into an 8x8x2 baking dish.

Slice cookie dough into 1/4-inch slices, then lay slices on top of peach mixture. Bake at 350 degrees for 1 hour or until golden brown. Cool. Serve with ice cream if desired. Serves 8.
