IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. biscuit baking mix
2 tbsp. butter
13 oz. evaporated milk
2 eggs
1 (16 oz.) can pumpkin
2 tsp. vanilla
2 1/2 tsp. pumpkin pie spice

Heat oven to moderate (350 degrees). Lightly grease pie plate (9 x 1 1/4 or 10 x 1 1/2 inches). Place all ingredients in blender container. Cover and blend on high speed for 1 minute.

Pour into pie plate. Bake until golden brown and knife inserted comes out clean. Cook for 50-55 minutes. Refrigerate leftovers.
