PITA BREAD 
1 tbsp. yeast
1 1/4 c. warm water
3-4 c. whole wheat flour

Dissolve yeast in water. Stir in 2 cups flour. Beat 50 vigorous strokes. Add more flour until dough comes away from sides of bowl and can be kneaded. Knead dough until smooth and elastic adding flour as necessary.

Shape dough into balls about 2 inch in diameter. Flatten on lightly floured board so they are even 1/4 inch thick. Let rise 45 minutes. Turn upside down on ungreased baking sheet. Place on bottom rack of 500 degree oven. Bake 5 minutes or until well puffed. Makes 10.
