MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. corn syrup
1 c. roasted, salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 quart microwave-safe bowl, combine sugar and syrup. Microwave high 4 minutes. Stir in peanuts. Microwave high 3-5 minutes until light brown. Add butter and vanilla, blending well. Microwave high 1-2 minutes. Syrup will be very hot. Be careful. Add baking soda and gently stir until light and foamy. Quickly pour onto lightly greased cookie sheet. When cool, break into pieces. Store airtight.

Since microwave ovens vary in power, you may need to adjust your cooking time.
