SQUASH CASSEROLE 
1 lb. yellow squash
1 bell pepper, chopped
1/4 stick butter
8 to 12 Ritz crackers, crushed
Salt and pepper to taste
1 onion, chopped
1/4 c. cottage cheese
1 egg, beaten

Boil squash, onion and pepper until tender, drain. Add butter, cheese and egg. Mix well. Pour in greased casserole. You can put grated cheese on top, if you like. Bake at 350 degrees until brown.
