CRAZY ENCHILADAS 
1 doz. corn tortillas
Oil
2 cans enchilada sauce
1 sm. can diced chilies
2 green onions, if desired
Ground beef or ground turkey
1 lb. shredded Monterey Jack cheese

Tear or cut tortillas into strips. Heat about 1/4 cup oil in frying pan. Fry several strips at a time to soften them (about 7 seconds). Drain. Place in casserole dish and begin to layer with cheese, ground meat, onions and chilies. Cover with enchilada sauce. Bake for 30 minutes at 350 degrees.
