OMA'S HAMBURGER SPRING VEGETABLE
SOUP
 
This soup is very easy to make and has been a Sunday favorite for years!

1 lb. lean ground beef
2 pkgs. spring vegetable soup mix (Honig Groentesoep)
2 to 3 tbsp. chicken soup base (Oxo)
3 (3x3-inch ea.) rice vermicelli noodles (Dong Guan)

Fill a large Dutch oven to 2-inches from the top with water and bring to a boil. Season beef to taste, roll into small meatballs and add to the pot. Add the soup base and soup mix, crumble the noodles and add let soup simmer on low temp for at least an hour.
