CHEESY SCALLOPED POTATOES | |
2 tbsp. butter 2 tbsp. flour 3 tbsp. chopped onion 2 c. milk 2 c. (6 oz.) Cheddar cheese 1/2 tsp. pepper 6 med. potatoes Peel potatoes and slice into 1/8 inch slices. Melt butter, add flour and onion. Cook and stir over low heat until bubbly. Gradually mix in milk and 1 1/2 cups of the cheese. Cook and stir over low heat until thickened, add pepper. Line a buttered baking dish with potatoes. Pour cheese mixture over potatoes. Sprinkle remaining 1/2 cup cheese on top. Bake 45-55 minutes at 350 degrees. Serve hot. |
