CHEESY SCALLOPED POTATOES 
5 med. potatoes, peeled & sliced
2 sm. onions, chopped
1/2 lb. cheddar cheese
1/4 c. (2 oz.) butter
4 tbsp. flour
2 c. milk
1 tsp. salt
1/2 tsp. pepper

Preheat oven to 350 degrees.

Melt butter over low heat, blend in flour, add the milk all at once. Cook, stirring constantly, until sauce thickens. Add cheese, salt and pepper and cook. Stir until cheese melts.

Spread half cheese sauce in the bottom of a shallow buttered 2 1/2 quart dish. Arrange potato and onion over the sauce and top with remaining cheese sauce. Cover with foil and bake 30 minutes. Uncover and bake 1 hour longer or until potatoes are tender. I like to add ham to mine for an extra touch. Serves 6 to 8.
