VEGETABLE PIE 
1 lb. fresh mushrooms
1 onion
2 zucchini
1 green pepper
3-4 tbsp. butter
1 tsp. salt
1/4 tsp. pepper
Dash of garlic salt
1 lg. tomato
1 c. mayonnaise
1 c. grated Mozzarella cheese
2 unbaked 10 inch pie shells

Slice or chop all vegetables except tomato. Saute in butter until slightly crisp. Drain well and add seasonings. Slice tomato and place slices in bottom of pie shells; add vegetables.

Mix mayonnaise and cheese together and spoon over vegetables. Bake uncovered at 350 degrees for 1 hour. Serves 6-8.
