CHICKEN PIZZARELLA 
2 lb. chicken cutlets (boneless, skinless breasts)
1 can (8 oz.) plain tomato sauce
1 can (4 oz.) mushrooms, undrained
2 tbsp. minced onion
1/2 tsp. oregano or Italian seasoning
Garlic salt
Fresh ground pepper
1 c. (4 oz.) shredded Mozzarella (I use more)

Slice the boneless cutlets into halves if they are connected. Arrange in a shallow baking dish. Combine all other ingredients except the cheese and pour on the chicken. Bake, uncovered, in a 350 degree oven 45 minutes or until tender. Sprinkle with cheese, return to oven and bake 5 minutes. 8 servings.
