MEAT SOUFFLE 
COMBINE TO MAKE WHITE SAUCE:

2 tbsp. butter, melted
3 tbsp. flour
1/2 c. milk, scalded
1/8 tsp. pepper
1/2 tsp. celery seed

ADD, THEN COOL:

1/2 c. chopped leftover roast beef
3 eggs, slightly beaten

FOLD IN:

3 egg whites, stiffly beaten

Pour into well-oiled casserole. Place in pan of warm water and bake at 375 degrees for 20 minutes or until knife test comes clean. Serve immediately with horseradish or catsup.
