BAKED INDIAN PUDDING 
1 qt. milk
1/4 c. cornmeal
1 tsp. salt
1/2 c. molasses
1 tsp. cinnamon or ginger or half of each

Scald 1 pint of the milk. Mix cornmeal, salt, molasses and spices together. Add slowly to scalded milk. Cook in double boiler, stirring continually until thickened. Put into a well buttered casserole dish. Bake for 1 hour at 300 degrees.

Pour remaining pint of cold milk into casserole. Stir all together. Continue baking at 300 degrees for 2 more hours. Serve warm. Use thick or whipped cream. Raisins may be added after being cooked. Serves 8.
