Chocolate Oatmeal No-Bake Cookies

I wanted to make these but had only 1 cup of quick oats and a full carton old fashion rolled oats. I compared the looks of the two different kinds and noted that the quick oats were crunched up and the old fashioned were whole pieces. WONDERFUL. YOU CAN USE OLD FASHIONED OATS if you chop them up first. Don't know if it matters but I use Quaker oats. I know some things do.

These are my favorite cookies of all time. My grandpa tried to show me how to make them when I was younger and I'm almost 21 now and I finally figured out how to make them. I'm actually going to make some today, I want chocolate. And a really yummy and good idea: try putting a few no bake cookies in vanilla ice cream, its really good.

LOVE LOVE LOVE. I made 100's of fudgies when I was a kid. My younger sister would put them in a square pan and put it in the freezer. They would set up faster that way. Lost the recipe so glad to find it again. I guess I will have to make it and take some to my sister!

I have been making this recipe since I was a child. I now call these cookies the "PMS cure". Not a cure, but the cocoa definitely helps!

I tried the recipe with dark cocoa and the consistency was not the same.

Use the "cold water" test for doneness. When a drop of the boiling mixture "sets" or "firms" in cold water, then you need to remove it from the burner asap. If cookies are dry (over-boiled), stir in tiny amounts of milk. If too wet, add oats.

To those of you who are having problems with hardening It is very possible you are using todays margarine. It has too much water in it. Use butter.

I like to use the whole oats, someone had said you can't but I always do, I don't like peanut butter so I substitute Nutella and it is yummy.

When I was in high school many years ago I got this recipe in Child care class as a treat for the children. My best friend and I used to make them all the time. Then I lost the recipe. I thought it was gone forever. lol So glad I found it. Now I have two grandsons and can make them for them.

For another healthy fat, i used 1/4 cup 2 tablespoons of Olive Oil Extra Light. As for the Oats... I never buy the quick cooking... i take the regular oats and pulse them for a second or two in a blender/processor, or what have you. You end up being able to use a little more oats then and at the end I throw in a little handful of unblended Oats so the cookies have some showing! DELICIOUS and eaten very quickly in my house!! You can even add walnuts... i haven't done coconut...but they would be good too! The only time they did not hold well together was when i left out the additional 2 tablespooons oil....
