1 c. (2 sticks) butter 1 c. sugar 2 egg yolks 1 tsp. vanilla 2 c. flour 1/4 tsp. salt 2 egg whites, slightly beaten 1 1/2 c. finely chopped pecans, walnuts, or cocktail peanuts (optional) Cream butter and sugar until light and fluffy. Add egg yolks and vanilla. Beat until all combined. Add salt and flour. Mix until smooth. Chill dough for easier handling. Shape into balls (1 inch), dip in egg whites and roll in nuts. Place on buttered cookie sheet and make a deep impression in center. Bake at 350 degrees for 15 minutes or until lightly browned around edges. Fill cookies with tinted icing. |
