ITALIAN CREAM CAKE 
1 stick butter
1 c. oil
2 c. flour, sifted
1 c. buttermilk
2 c. sugar
5 egg yolks
5 egg whites
1 tsp. baking soda
1 tsp. vanilla
1 1/2 c. flaked coconut
1 c. pecans or walnuts

Mix together sugar, oil and butter, add egg yolks and blend well. Add flour, soda, vanilla and buttermilk. Beat for 4 minutes. Add coconut and nuts. Beat egg whites until stiff peaks form. Fold in last.

Place in 3 greased and floured layer pans and bake at 350 degrees for 25 minutes or until done. Or may make sheet cake, 9 x 13 inch pan.

FROSTING FOR 3 LAYER CAKE:

1 (8 oz.) pkg. cream cheese
1/2 stick butter
1 box powdered sugar
1 c. chopped nuts

Mix and spread on cooled cake.
