MASHED POTATO CASSEROLE 
About 2 c. mashed potatoes
1 egg
1 stick butter
1 onion, coarsely chopped
3 slices soft bread
Cheese, if desired

Add egg to potatoes and set aside. In a saucepan, melt butter. Add onion and saute until tender. Break apart 3 slices of bread, including crusts, and add to onions, making sure all bread is coated with butter. Stir onion and bread mixture into mashed potatoes, and put into greased casserole dish. Bake at 350 degrees until golden brown and bubbly. May be topped with cheese the last 5 minutes of baking.

NOTE: This may be made with leftover mashed potatoes, instant potatoes.
