MASHED POTATO CASSEROLE 
8 med. white potatoes
1 sm. onion, diced
1 (8 oz.) sour cream
1 c. grated cheese
1/4 c. butter
Salt & pepper to taste

Peel and slice potatoes, cook until tender, drain and mash or put in mixer until smooth. Add onion, butter and sour cream. Mix well. Add salt and pepper to taste. Put in greased casserole. Bake at 350 degrees for 20 minutes. Add cheese, bake 5 minutes more or until cheese melts. Serve warm.
