APPLE BUTTER 
4 lb. well flavored apples, stemmed and quartered
2 c. water or apple cider
sugar
cinnamon
cloves
allspice
sugar to taste

Cook apples in water or apple cider until soft; strain and mash into a pulp. To each cup of pulp, add 1/2 cup of sugar and stir in 3 teaspoons cinnamon, 1 1/2 teaspoons cloves, 1/2 teaspoon allspice and sugar to taste. Cook over low heat, stirring often, until mixture sheets from a spoon.
