SOFT GINGER COOKIES 
2 1/4 c. flour
1 tsp. ginger
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. salt
3/4 c. shortening
1 c. sugar
1 egg
1/4 c. molasses
2 tbsp. sugar

Combine flour, ginger, soda, cloves, cinnamon and salt; set aside. Beat sugar and shortening until fluffy. Add egg and molasses; beat well. Stir dry ingredients into beaten mixture. Shape into 1 1/2 inch balls. Roll in the 2 tablespoons sugar and place on an ungreased cookie sheet, about 2 1/2 inches apart.

Bake in a 350 degree oven about 10 minutes until light brown and still puffed. Do not over bake. Let stand 2 minutes before removing from pan. Makes 24 three inch cookies.
