BANANA OATMEAL CAKE 
1 1/4 c. sifted flour
1 1/2 tsp. baking soda
1/2 tsp. each baking powder and salt
1/2 c. shortening
1 c. sugar
1 tsp. vanilla
2 eggs
1/2 c. buttermilk
1 1/2 c. quick cooking rolled oats
1 1/4 c. mashed bananas

Sift together flour, baking powder, salt and soda. Cream sugar and shortening. Add vanilla and eggs one at a time, beating well after each addition. Add dry ingredients alternately with the buttermilk. Stir in oats, then bananas. Bake at 350 degrees until done. If in 8 inch layer pans, 25 to 30 minutes. Cool on rack 10 minutes before removing from pan.
