CARIBBEAN RED SNAPPER 
Vegetable cooking spray
1 lg. onion, sliced
2 lg. tomatoes, peeled and chopped
1 tsp. sugar
1/2 tsp. dried whole oregano
1/4 tsp. chopped fresh parsley
1/2 bay leaf, crumbled
1/4 c. water
Dash hot sauce
3 lbs. red snapper fillets or other lean white fish
1 1/2 tbsp. lemon juice
1 sm. clove garlic, minced
1 lg. onion, chopped
1/2 c. chopped green pepper
1 tbsp. olive oil
1/4 c. sliced almonds, toasted

Coat 13x9x2 baking dish with cooking oil. Arrange onions in dish. Add tomatoes and next 5 ingredients. Combine water and hot sauce. Pour over mixture.

Rub fillets with lemon juice and arrange in baking dish. Saute garlic, chopped onion and peppers in olive oil 3 minutes. Spoon over fish. Cover and bake at 400 degrees F. for 40 to 45 minutes. Garnish with toasted almonds. 147 calories.
