DADDY'S COCONUT CAKE 
1 c. sugar
1/2 c. white corn syrup
1/2 c. shortening
3 egg yolks, beaten
2 1/2 c. flour
2 tsp. baking powder
1 c. milk
2 egg whites, beaten
1/2 c. shredded coconut
1 tsp. vanilla

Cream sugar, syrup and shortening. Add egg yolks, cream until smooth. Sift flour and baking powder. Add to mixture alternately with milk, beating well after each addition. Add coconut and vanilla. Fold in beaten egg whites. Bake in 3 layers at 375 degrees about 30 minutes.

WHITE FROSTING:

2 egg whites (unbeaten)
1 1/2 c. sugar
1/2 c. boiling water
1 tsp. vanilla
1/4 tsp. cream of tartar
1/2 c. coconut
