CANDIED SWEET POTATOES 
6 med potatoes
1/2 tsp. salt
1 c. brown sugar
1/4 tsp. cinnamon
1/2 c. water
4 tbsp. butter
1 tbsp. lemon rind or juice
1 1/2 tbsp. cornstarch

Cook potatoes with jackets on in boiling water until tender, slip skins off; cut into pieces. Place in a shallow dish. In a saucepan combine sugar, cinnamon, water and butter. Add cornstarch. Remove from heat; add lemon juice. Pour over the potatoes. Bake at 375 degrees for 25 minutes. Baste with syrup.
