PEACHY MUFFINS | |
1/2 c. butter 2 c. flour 1 c. sugar 2 tsp. baking powder 1/2 c. milk 2 eggs 1/2 tsp. vanilla 1 tsp. almond extract 1/4 to 1/2 tsp. salt 2 tbsp. sugar (for topping) 2 to 2 1/2 c. cut-up peaches (2 to 3 lg.) Cut up (and peel if desired) peaches, place in a bowl with the almond extract. Cream butter and sugar until fluffy; add eggs, one at a time. Add milk and vanilla and mix well. Add dry ingredients and mix slightly, only to moisten dry ingredients. Stir in peaches by hand. Do not over beat batter! Spoon into prepared muffin tins. Sprinkle sugar on top. Bake at 375 degrees for 25 to 30 minutes. |
