ZUCCHINI MUFFINS 
3 lg. eggs
3/4 c. oil
1 3/4 c. sugar
2 c. grated zucchini
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 c. crushed canned peaches (drained)
1 c. raisins
2 tsp. vanilla

Beat eggs, add sugar, oil and zucchini, mix. Add flour, baking soda, baking powder, salt and cinnamon. Mix in peaches and vanilla. Pour into muffin cups, mini tins or cake pans. Bake at 350 degrees until light browned and check doneness with toothpick.
