PARTY APPLE CAKE 
3 c. chopped raw apples
1 1/2 c. cooking oil
2/3 c. brown sugar
1 1/3 c. granulated sugar
1 tsp. vanilla
2 tsp. baking powder
3 eggs
1 tsp. salt
1 tsp. baking soda
2 1/2 c. sifted flour
1 c. chopped nuts

Peel and chop apples and set aside. Pour oil into large mixing bowl. Add sugar and egg and beat well. Sift flour, salt, baking powder and soda. Gradually add flour to creamed mixture. Add the nuts and vanilla; gently fold in the apples. Grease a 10 inch tube pan and line it with waxed paper. Pour in batter and bake at 350 degrees for 1 hour.
