ZUCCHINI BREAD 
3 eggs
1 c. cooking oil
2 c. sugar
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
2 c. grated zucchini
1 c. chopped nuts

In a large bowl beat eggs until foamy. Add cooking oil. Sift together sugar, flour, baking powder, baking soda, salt and cinnamon. Add to eggs and oil. Stir in grated zucchini and nuts. Pour in 2 well greased and floured loaf pans. Bake at 350 degrees for 1 hour or until bread tests done in center.
