ZUCCHINI BREAD 
3 eggs
2/3 c. honey
3 tsp. vanilla
1/4 c. bran
1 tsp. salt
1 tsp. cinnamon
1/2 c. chopped nuts
1 c. oil
2 c. grated zucchini
1 1/2 c. whole wheat flour
1/4 c. wheat germ
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. raisins

Beat eggs, oil and honey. Add zucchini, vanilla and mix well. Be sure the zucchini is well drained before adding to the batter. Add: flour, bran, wheat germ, salt and other dry ingredients. Mix well. Fold in nuts and raisins. Bake at 325 degrees in greased and floured pans (two 8 1/2 x 4 1/2 x 2 1/2 inches), or 1 larger pan, for 1 hour and 15 minutes. These breads may be frozen.
