CAN'T STOP EATING THAT ZUCCHINI BREAD | |
3 c. flour, sifted 1 tbsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1/4 tsp. baking powder 3 eggs, beaten 1 c. sugar 1 c. brown sugar, firmly packed 1 c. vegetable oil 1 tbsp. vanilla 2 c. zucchini, grated 1/2 c. nuts, chopped Mix flour, cinnamon, salt, baking soda and baking powder; set aside. In large bowl, beat eggs, sugar, brown sugar, vegetable oil and vanilla. Stir in sifted ingredients. Blend in zucchini and nuts. Pour into 2 greased and lightly floured 4 1/2 x 8 1/2 loaf tins. Bake at 325 degrees for 60 to 70 minutes or until toothpick comes out clean. |
