WINNING COFFEE CAKE 
2 c. sifted all-purpose flour
1 1/2 c. sugar
3 tsp. baking powder
3/4 tsp. salt
1/4 c. butter and 1/4 c. shortening
3 eggs, separated
3/4 c. milk

Sift together flour, sugar, baking powder and salt. Rub together with the butter and shortening until well mixed. RESERVE 1 cup of this mixture.

To remainder add beaten egg yolks and milk. Fold in beaten whites. Pour into 8 x 12 inch pan which has been greased on the bottom. Sprinkle RESERVED mixture on top. You then can add cinnamon, finely grated almonds or coconut on top of the mixture. Bake at 350 degrees for 35 minutes.
