HEARTY BEEF CASSEROLE 
6 tbsp. butter
1 lb. ground chuck
1/4 c. all-purpose flour
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 c. light cream
1 1/2 c. Cheddar cheese
1 tsp. Worcestershire sauce
1 (1 lb.) can mixed vegetables
1 (4 oz.) can sliced mushrooms
2 c. mashed potatoes

Melt 2 tablespoons butter in a large skillet. Add onion and beef, saute until beef is brown and crumbly. Drain. Set beef mixture aside.

Melt remaining butter in a 2-quart saucepan. Stir in flour and seasonings until smooth. Remove from heat, gradually stir in cream. Heat to boiling, stirring constantly for 1 minute. Remove from heat and stir in 1 cup cheese until melted. Add Worcestershire sauce, vegetables, beef mixture and mushrooms.

Spoon into a greased 1 1/2 quart casserole. Bake at 375 degrees for 20 minutes. Remove from oven. Spoon potatoes around edges, or use pastry tube, top with remaining cheese. Broil 3-5 minutes.
