OUT OF THIS WORLD POTATO SALAD | |
3 red potatoes (or regular baking potatoes) 3 tbsp. red onion 3 tbsp. green bell pepper 1/4 tsp. fresh cracked black pepper 2 tbsp. finely shredded carrots 1/3 cup dairy sour cream (or light) 1/3 cup mayonnaise (or light) 1 1/2 tsp. mustard 1 tsp. fresh lemon juice green chilies and cilantro (optional) Steam the red potatoes until them are cooked. Make sure you do not over cook the potato (it wont hold up if it gets mashed up). Cube potatoes 1x1-inch. Finely shred carrots, finely chop green peppers and red onions. In a bowl combine carrots, green peppers, and onions. Add salt, black pepper, lemon juice, dairy sour cream and mayonnaise to bowl and combine well. Then add potatoes and mix. Note: I like to add a little chili pepper for some heat along with some cilantro for a nice light herb taste, but it tastes great without it as well.
