SWEET CINNAMON QUICK BREAD 
BATTER:

2 cups all-purpose flour
3/4 cup sugar
4 tsp. baking powder
2 tsp. ground cinnamon
3/4 tsp. salt
1 cup buttermilk
1/4 cup vegetable oil
2 egg whites
1 egg
2 tsp. vanilla

Preheat oven to 350°F. Coat a 9x5-inch loaf pan with non-stick cooking spray (Pam).

In a large bowl, mix flour, sugar, baking powder, cinnamon and salt. Add buttermilk, oil, egg whites, egg and vanilla.

Beat with an electric mixer on medium speed for 3 minutes. Pour the batter into the prepared pan.

STREUSEL:

2 tbsp. sugar
1 tsp. ground cinnamon
2 tsp. butter, softened

In a small bowl, mix sugar, cinnamon and butter until crumbly. Sprinkle over the batter and swirl slightly with a knife to marble it through the batter.

Bake at 350°F for about 55 minutes, or until a skewer inserted in the center comes out clean.

Cool for 10 minutes in the pan on a wire rack, then remove from the pan to finish cooling.
