BEETNICK CAKE 
2 c. sugar
2 c. flour
3 eggs
1 1/4 c. Wesson oil, butter flavored is best
1 (1 lb.) can beets
1 tsp. vanilla
1 tsp. baking soda
3/4 tsp. salt
1/2 c. cocoa

Drain beets, mash and set aside. Mix all ingredients. Add 1 egg at a time, beat well. Add beets and mix well. Bake in long cake pan at 350 degrees for 45 minutes. Ice in same pan while cake is still hot.

ICING:

1 stick butter
1/2 c. nuts
4 tbsp. cocoa
1 tsp. vanilla
6 tbsp. canned milk, add 2 tbsp. beet juice
1 tsp. cinnamon

Bring to a boil, take from stove and add 1 box powdered sugar.
