NORWEGIAN LEFSA 
6 med. potatoes
1/2 c. whole milk
1 tbsp. lard or other shortening
1 tsp. salt
2 c. all-purpose flour

Mash or rice and cool potatoes. Add milk, shortening, salt and flour. Mix into a firm dough. Cut into small portions and pat into balls the size of an orange. Flatten ball and roll out on floured board to 1/8 inch thickness. Pick up with wooden spatula and turn onto a hot pancake griddle. Bake like a pancake on both sides.
