SALAD OIL 
2 strips lemon peel (yellow only)
1/2 tsp. salt
2 tbsp. vinegar
1/2-2/3 c. extra virgin olive oil
Black pepper
2 tsp. Dijon mustard

Mince lemon peel. Make paste with everything but oil. Whisk while slowly adding oil. May add seasons to taste.
