SPICED ONIONS AND BEETS 
2 c. thinly sliced Spanish onion
2 c. peeled and sliced cooked beets
1/2 c. white wine vinegar
3/4 c. water
1 cinnamon stick
4 cloves
3 tbsp. sugar
1/2 tsp. salt
1/8 tsp. pepper

Separate onion slices and place all ingredients in a saucepan. Bring to a boil and simmer gently for 10 minutes. May be served hot or cold.
