PORK CHOP AND RICE CASSEROLE 
1 c. uncooked rice
1 med. onion, chopped
1 med. pepper, chopped
Salt and pepper to taste
1 can chicken gumbo soup
1/2 can water
4-6 pork chops, boneless or regular

Pour rice in bottom of greased baking dish. Evenly spread onions and peppers on top of rice. Add salt and pepper to taste. Lay pork chops on top evenly. Pour 1 can of soup and water on top.

Bake covered in preheated 325 degree oven for about 1 hour and 15 minutes or until done. Could be prepared ahead of time, just add liquid before baking.
