CARROT CASSEROLE 
1 onion, minced
1 c. celery, finely cut
3 tbsp. butter
3 c. cooked, mashed carrots
2 eggs, slightly beaten
1/2 c. milk
1 tsp. salt
1/2 c. Ritz cracker crumbs

Saute onion and celery in butter. Add to mashed carrots. Add rest of ingredients. Place mixture in buttered casserole and bake uncovered for 20-30 minutes at 350 degrees.
