CARROT CASSEROLE 
4 c. cooked carrots, not too soft
1 med. onion, chopped & sauteed in butter
1 can cream of celery soup
1/2 c. grated cheddar cheese
Salt & pepper to taste
2 c. Pepperidge Farm stuffing mix

Mix onion, soup, cheese, salt and pepper. Add cooked carrots. Put in greased casserole and cover with stuffing mix. Bake at 350 degrees for 30 minutes or until it begins to bubble.
