CHEESECAKE SURPRISE 
2/3 c. all-purpose flour
2 tbsp. granulated sugar
1/4 tsp. salt
6 tbsp. butter
1 beaten egg yolk
2 (8 oz.) pkg. cream cheese
2/3 c. granulated sugar
1 tbsp. all-purpose flour
1 tsp. vanilla
4 eggs
1 egg white
2 c. pared & diced fresh pears (2 med. pears)
1/2 c. fudge topping
1 c. dairy sour cream
1/3 c. powdered sugar
1/2 tsp. vanilla

To prepare crust: Stir together the 2/3 cup flour, the 2 tablespoons granulated sugar and the salt. Cut in butter until crumbly; stir in egg yolk, blending well. Press evenly onto bottom of 9 inch springform pan. Bake in 350 degree oven for 18 minutes; cool. Reduce oven temperature to 325 degrees.

To prepare filling: In large mixer bowl, beat together cream cheese, the 2/3 cup granulated sugar and the 1 tablespoon flour until creamy. Add the 1 teaspoon vanilla. Beat in the eggs and the egg white until well blended. Stir in diced pears. Turn into cooled crust. Bake in 325 degree oven about 1 hour and 10 minutes or until knife inserted off center comes out clean.

Carefully spread fudge topping over baked filling. Combine sour cream, powdered sugar and the remaining vanilla; mix well. Swirl sour cream mixture into chocolate. Return to oven; bake 5 minutes more. Chill several hours or overnight. Garnish with fresh pear slices, if desired.
