GOLDEN OVEN-FRIED PARMESAN/HERB
CHICKEN
 
3/4 c. dry bread crumbs
1/4 c. grated Parmesan cheese
1/4 c. finely chopped blanched almonds, if desired
2 tbsp. minced parsley
1 tsp. salt
1/4 tsp. ground thyme
1/8 tsp. pepper
1/2 c. butter
1/2 tsp. garlic powder or 1 clove garlic, crushed
2 1/2 to 3 lb. frying chicken, cut up

Preheat oven to 375 degrees. In a pie pan, combine crumbs with next 6 ingredients.

In a 13 x 9 inch (shallow 3 quart) baking dish, melt butter with garlic. Dip chicken pieces in garlic-butter, then in crumb mixture. Place in baking dish skin side up. Bake, uncovered, at 375 degrees for 55-65 minutes until chicken is tender.

Do not turn chicken pieces during baking. 4-6 servings.
