OVEN - FRIED PARMESAN CHICKEN 
1 c. buttery cracker crumbs
1/2 c. grated Parmesan cheese
2 tbsp. chopped parsley
1 (2 1/2 to 3 lb.) broiler fryer, cut up chicken
1/2 c. butter, melted

Combine first 3 ingredients; mix well. Dip chicken in butter; dredge in cracker crumb mixture. Place chicken in a lightly greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 350 degrees for 1 hour.
