CUBAN CAKE | |
400 gr. sugar 140 gr. butter 250 gr. flour 1 tsp. cinnamon 2 eggs 125 gr. coconut 2 tsp. baking powder 1/2 c. milk + 1/2 c. water Boil to brown half of the sugar and add the milk with water. Let cool. Beat together the remaining of the sugar with the butter. Add the eggs, cinnamon and milk with sugar. Fold in the flour with the baking powder. Bake for 1 hour at 350 degrees, in greased pan. GLAZE: 1 c. confectioners' sugar 1 tbsp. cocoa 2 tsp. butter Mix together the sugar and cocoa. Add a drop or 2 of boiling milk to make a thin batter. Add the butter. Beat well. Cut the cake in 2, put some of this mixture in between and cover the cake with the remaining. (Do it fast because it dries very fast.) |
