APRICOT SQUARES 
1 c. butter
1 c. sugar
1 egg yolk
2 c. flour
3/4 c. finely chopped nuts
1 (10 oz.) jar apricot preserves

Cream butter and sugar; add egg yolk and mix well. Stir in flour. Add nuts and blend well (dough will be soft). Divide the dough in half. Spread evenly onto the bottom of a 9 x 13 inch pan. Cover with apricot preserves. Drop remaining dough by spoonfuls over the preserves. Spread carefully to edges with a knife. Bake at 350 degrees until top is golden, 40-45 minutes. Cool slightly before cutting into squares.
