CRAB CAKES | |
1 lb. crab meat 1 tbsp. mayonnaise 1 tbsp. mustard 1/2 stick butter 1 med. onion 3 eggs 1/4 pkg. crackers, crushed (approximately 12-14) Clean crab meat, then put in large bowl. Add pepper and salt to taste. Mix well. Add mustard and mayonnaise. Mix well. Put frying pan on, melt butter. Dice onion and cook about 2 minutes slowly. Add beaten eggs and cook until soupy. Mix with crab meat and let cool. Add crackers and mix well. Make into cakes (about 9 per lb.). Bake in oven at 400 degrees or fry until golden brown. |
